Lobster Tales

When asked why he wrote a book about lobsters Trevor Corson gave this answer, "Lobstermen are the last rugged individuals, the cowboys of the East. And the lobster has this interesting duality as food. We consume it as a luxury, but it is also an incredibly primal meal, the last animal we encounter face to face on our plates."
So if you encounter one of these "cowboys of the east" remember these bits of information about the lobster:
They are aggressive creatures.
Lobsters are social yet they hate each other also.
Their bladders are in their heads.
A lobsters teeth is inside its stomach to grind the food.
When molting its exoskeleton things get a bit violent for the lobster. The lobster must first lose weight or else it can get stuck in the old exoskeleton. This is extremely helpful when pulling its claw muscles out through the narrow wrists.The teeth come out with the old shell.
In the larvae stage the lobster is only the size of a kidney bean. "It's the only time in their lives that they swim forward" Their goal is to find a hiding spot to stay for "two to four years."
You may not want to "eat the green stuff." This is from the tomalley which is "a combined liver and pancreas." in the lobster.
